Ingredients

ส่วนผสม

ไข่ไก่สด 3 ฟอง
ไข่เค็ม ควักเอาแต่เนื้อ ผ่าเป็นสี่ชิ้น 3 ฟอง
ไข่เยี่ยวม้า ปอดเปลือก ผ่าครึ่ง 3 ฟอง
มะเขือเทศหั่นบาง 1 ลูก
ขิงดองหั่นบางๆ 100 กรัม
ต้นหอมซอย 30 กรัม
คึ่นฉ่ายซอย 30 กรัม

เครื่องปรุงน้ำยำ

พริกขี้หนู 9-11 เม็ด
กระเทียม 7-8 กลีบ
น้ำกระเทียมดอง ½ ถ้วย
น้ำตาล 2 ช้อนชา
น้ำปลา 2 ½ ช้อนโต๊ะ
น้ำมะนาว 3-4 ช้อนโต๊ะ
น้ำต้มสุก 2-3 ช้อนโต๊ะ

Main ingredients

3 fresh eggs
3 salted eggs, discard the shell and quartered
3 thousand years eggs, peeled and half
1 thinly sliced tomato
100 g thinly sliced pickled ginger
30 g thinly sliced spring onion
30 g thinly sliced Chinese celery

Ingredients and seasoning for the dressing

9-11 bird eye chilies
7-8 cloves of garlic
½ c. water of preserved garlic
2 tsp. sugar
2 ½ tbs. fish sauce
3-4 tbs. lime juice
2-3 tbs. look warn water

1. ตำพริกขี้หนูกับกระเทียมหยาบๆ

2. ปรุงรสด้วย น้ำตาล น้ำปลา น้ำกระเทียมดอง และ น้ำมะนาว ใส่น้ำอุ่นเล็กน้อย พักไว้

Season with sugar, fish sauce, marinating water from preserved garlic and lime juice and taste. Dilute with a little bit of water. Set aside.

3. ต้มไข่ไก่ในน้ำอุณหภูมิห้อง ใส่เกลือเล็กน้อย ใช้ทัพพีคนจนกระทั่งเดือด จับเวลาต้มต่ออีก 7-8 นาที นำไข่มาผ่าน้ำเย็นจนเย็นสนิท ปอกเปลือกแล้วผ่าเป็นสี่ส่วน จัดเรียงในจานพร้อมทั้งไข่เค็ม และไข่เยี่ยวม้า

Bring fresh eggs and room temperature salted water to the boil. Constantly stir by using the spatula until bubbling boil and continue to boil for 7-8 minutes. Run eggs through running water until completely cool down then peel and quartered. Arrange to the serving plate along with salted eggs and thousand years eggs.
