1. นำกระเทียม พริกชี้ฟ้าแดงลงปั่นให้ละเอียด พักไว้
In food processor, blend cloves of garlic and red goat pepper until thoroughly and set aside.
2. ทอดปลานิลในน้ำมันร้อนๆ จนสุกเหลืองทั้ง 2 ด้าน พักไว้
Deep fry Talapia in plenty preheated oil in the wok until golden in both side, set aside.
3. ในกระทะใบเดิม เทน้ำมันออกเกือบหมด ใส่พริกกับกระเทียมที่ปั่นละเอียดแล้วลงผัดบนไฟกลางๆ จนสุกหอม ปรุงรสด้วยน้ำตาล น้ำปลา และน้ำมะขามเปียกคั้นข้นๆ เคี่ยวต่อจนค่อนข้างเหนียว ปิดไฟได้
In the same wok, discard almost of the oil, some remain. Fry thoroughly blended garlic and goat pepper over medium heat until aroma, season with sugar, fish sauce and concentrated tamarind juice. Continue to simmer until thick then turn the heat off.
4. ตักราดบนตัวปลา เสิร์ฟได้
Pour over deep fried fish and serve.
