ส่วนประกอบ

ปีกไก่ตัดเป็นท่อนๆ 300 กรัม
มะระคว้านไส้ออก แล้วหั่นเป็นชิ้นพอดีคำ 150 กรัม
หัวไชเท้าปอกเปลือก หั่นบางๆ 50 กรัม
เห็ดหอมแห้ง แช่น้ำให้นิ่ม สะเด็ดน้ำ 50 กรัม
เลือดไก่หั่นเป็นชิ้นพอดีคำ ลวกน้ำเดือด 50 กรัม
กะหล่ำปลีซอย ลวก 50 กรัม
ถั่วงอกดิบ ลวก 75 กรัม
ผักชี ต้นหอม คึ่นฉ่ายซอยรวมกัน 50 กรัม
เต้าหู้พวง 50 กรัม
เครื่องยาจีน 1 แพค
รากผักชี 3 ราก
พริกไทยเม็ด 1 ช้อนโต๊ะ
กระเทียมเจียว 3-4 ช้อนโต๊ะ
ตั้งฉ่าย 3-4 ช้อนโต๊ะ
เส้นหมี่แช่น้ำจนนิ่ม สะเด็ดน้ำ ลวกน้ำเดือดๆ คลุกกระเทียมเจียว 300 กรัม
ผักกาดหอม

ซีอิ๊วขาว 3 – 4 ช้อนโต๊ะ
น้ำตาล 1 ช้อนโต๊ะ
ซีอิ๊วดำ 1 ช้อนโต๊ะ

Ingredients

300 g chopped into large pieces, chicken wings
150 g bitter gourd, discarded the seed and cut into bite size
50 g peeled and thinly sliced Chinese radish
50 g soaked and drained, dried shitake mushroom and reserved the water
50 g blanched and cut into bite size, chicken blood jelly
50 g blanched, thinly sliced cabbage
75 g blanched, bean sprout
50 g mixture of thinly sliced spring onion, coriander and Chinese celery
50 g halved deep fried tofu
1 pack, all spices for braising
3 coriander roots
1 tbs. dried pepper corn
3-4 tbs. crispy garlic in oil
3-4 tbs. preserved dried cabbage
300 g soaked, dried rice vermicelli, drained, blanched and mixed with crispy garlic

3-4 tbs. seasoning sauce
1 tbs. sugar
1 tbs. dark soy sauce

วิธีทำ

1. นำปีกไก่ พริกไทยเม็ด รากผักชี เครื่องยาจีน และหัวไชเท้าใส่ลงในหม้อก้นลึก ใส่น้ำพอท่วม แล้วตั้งไฟอ่อนที่สุดประมาณ 45 นาที หรือจนกว่าปีกไก่จะเริ่มเปื่อย

Place chopped chicken wings, dried pepper corn, coriander roots, all spices and thinly sliced Chinese radish in deep base pot, fill the pot with water to reach ¾ of the pot and simmer over the lowest heat until chicken started to be soft and tender.

2. ใส่มะระ เห็ดหอม เต้าหูพวง ปรุงรสด้วยน้ำตาล ซิอิ๊วขาว และซีอิ๊วดำ แล้วเคี่ยวต่อจนกว่าทุกอย่างจะเปื่อยดี

Add bitter gourd, soaked dried shitake mushroom and deep fried tofu, season with sugar, seasoning sauce and dark soy sauce and continue to simmer until everything is tender.

3. นำผักกาดหอมจัดลงในถ้วย ตามด้วยกะหล่ำปลี ถั่วงอก เส้นหมี่ที่ลวกแล้ว โรยตั้งฉ่าย ตักน้ำซุปใส่พร้อมกับเครื่องที่ต้มเปื่อยดีแล้ว โรยต้นหอมหั่นฝอย ผักชีหั่นฝอย คึ่นช่ายหั่นฝอย

Place lettuce in the serving bowl, follwed by blanched thinly sliced cabbage, blanched bean sprout and blanched rice vermicelli. Sprinkle with preserved dried cabbage. Gently pour in the soup and condiments and sprinkle over with the mixture of thinly sliced spring onion, coriander and Chinese celery.
